Winemaking
Hand-picked by the family in mid-March, the fruit was crushed and destemmed with some whole bunches added to the ferment. Fermentation took place in small open fermenters with daily plunging. At completion of ferment the wine was basket pressed to stainless steel tanks. This wine was matured in seasoned oak for 6 months.
Viticulture
The vineyard is positioned 10mins out of McLaren Vale in McLaren Flat. This North facing vineyard is positioned optimally amongst the sand hills. This vineyard boarders the Grenache. The 7 acres of Shiraz vines were planted by the Whish family in 1999 and have been proving generous parcels of fruit for 25 years.
