Winemaking
Picked in the cool of the night, the grapes were berry fermented with a small portion of stalks left in the ferment. During fermentation the skins were plunged to achieve gentle extraction of fruit flavours and tannins. On completion of fermentation the wine was basket pressed and matured in French Oak to develop complexity, depth of flavour and character.
Viticulture
The vineyard is positioned 10mins out of McLaren Vale in McLaren Flat. This vineyard is grown on clay soil on the flat behind the winery. Planted in the 1950 this old vine is comprised of 18 rows, 1.2 ha on our Ingoldby road property. The Whish family has nurtured this vineyard for over 20years.
